Sauteed Zucchini with Basil & Cheese

Ingredients

  • 1 Tbsp. olive oil
  • 2 cloves garlic, thinly sliced
  • 1 lb. zucchini, sliced 1/4-inch thick
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 large tomato, diced
  • 1/4 cup thinly sliced fresh basil
  • 1 cup (4 oz.) Sargento® Artisan Blends™ Shredded Parmesan Cheese

Directions

  1. Heat oil in large skillet over medium; cook garlic 2 minutes, stirring frequently. Add zucchini, salt and pepper; cook 5 minutes or until zucchini is crisp-tender, stirring frequently.
  2. Stir in tomato and basil. Divide among 4 serving plates; top with cheese. Serve warm.
