Light Style Jambalaya

Ingredients

  • 1 cup long grain white or jasmine rice, uncooked
  • 1 cup chopped onion
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 tsp. blackened or Cajun seasoning
  • 3 links (6 oz.) chicken andouille or turkey smoked sausage, thinly sliced
  • 1 can (14-1/2 oz.) Cajun style stewed tomatoes, undrained
  • 1 cup (4 oz.) Sargento® Shredded Reduced Fat 4 Cheese Italian Cheese or Sargento® Artisan Blends™ Shredded Parmesan Cheese
  • 1/4 cup chopped parsley

Directions

  1. Cook rice according to package directions.
  2. Generously coat a large saucepan with cooking spray; add onion. cook over medium-high heat 4 minutes or until softened, stirring frequently. Add bell pepper and garlic; cook 3 minutes, stirring occasionally. Sprinkle seasonings over vegetables; mix well. Stir in sausage; cook 1 minute. Add tomatoes; cover and simmer 10 minutes.
  3. Spoon cooked rice onto four serving plates; top with sausage mixture. Sprinkle with cheese and parsley.
