Connie's Italian Chicken

Ingredients

  • 2 Tbsp. olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 can (14-1/2 oz.) crushed tomatoes
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 lbs. chicken, cut up or 6 bone-in chicken breast halves
  • 6 slices Sargento® Deli Style Sliced Mozzarella Cheese
  • 1/2 cup (2 oz.) Sargento® Artisan Blends™ Shredded Parmesan Cheese
  • Chopped parsley (optional)

Directions

  1. Heat oil in large skillet over medium heat. Add onion, bell pepper and garlic; cook 5 minutes, stirring occasionally. Stir in tomatoes, Italian seasoning, salt and pepper; simmer 2 minutes.
  2. Place chicken in roasting pan; pour tomato mixture over chicken. Bake uncovered in preheated 350°F oven for 1 hour.
  3. Lay Mozzarella cheese slices over chicken; top with Parmesan cheese. Bake 10 minutes more or until chicken is cooked through and cheese is melted.
