Mushroom and Broccoli Penne

Ingredients
- 8 oz. penne pasta
- 2-1/2 cups broccoli florets
- 2 Tbsp. butter
- 2-1/2 cups (8 oz.) crimini or button mushrooms, sliced
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1 cup half-and-half
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3/4 cup (3 oz.) Sargento® Artisan Blends® Shredded Parmesan Cheese, divided
Directions
- Cook pasta according to package directions; drain.
- Place broccoli in small microwave-safe bowl. Cover; microwave on HIGH 2 minutes or until broccoli is crisp-tender.
- Melt butter in large skillet over medium heat. Add mushrooms and onion; cook 4 minutes, stirring occasionally. Add garlic; continue cooking 2 minutes. Add half-and-half; simmer 3 minutes or until slightly thickened. Stir in broccoli; toss pasta with broccoli mixture and 1/2 cup cheese. Transfer to serving plates; top with remaining cheese.
