Mediterranean Broiled Fish

Ingredients

  • 1/4 cup light mayonnaise
  • 1/4 cup (1 oz.) Sargento® Shredded Reduced Fat Mild Cheddar Cheese
  • 1 Tbsp. Sargento® Artisan Blends™ Shredded Parmesan Cheese
  • 1 clove garlic, minced
  • 2 Tbsp. minced green onions
  • 5 pitted black olives (optional)
  • 4 fillets (5 oz. each) red snapper or sole
  • Paprika

Directions

  1. Combine mayonnaise, Cheddar and Parmesan cheeses, garlic and olives, if desired, in small bowl.
  2. Preheat broiler. Place fillets on broiler pan sprayed with nonstick vegetable spray. Sprinkle fish with paprika. Broil 5 minutes or until fish begins to flake with a fork. Divide cheese mixture and spread evenly over each fillet. Broil 2 minutes more or until topping puffs and cheese is melted.
