Fiesta Frijoles

Ingredients

  • 1 can (16 oz.) black beans, drained and rinsed
  • 1 can (16 oz.) pinto beans, drained and rinsed
  • 1 can (16 oz.) dark red kidney beans, drained and rinsed
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 can (11 oz.) whole kernel corn, drained
  • 1-1/4 cups salsa or picante sauce
  • 1/2 cup quick cooking brown or white rice
  • 1 can (2.25 oz.) sliced ripe olives, drained
  • 1-1/2 tsp. ground cumin
  • 1-1/2 cups chicken, pork or sausage, cooked and chopped (optional)
  • 2 cups (8 oz.) Sargento® Fancy Shredded 4 Cheese Mexican Cheese or Sargento® Bistro® Blends Shredded Taco Cheese
  • 1/2 cup cilantro, chopped
  • Tortillas (optional)

Directions

  1. Combine beans, tomatoes, corn, salsa, rice, olives, cumin and chicken, if desired in large bowl; mix well. Transfer to 3-quart round microwave-safe casserole dish and cover.
  2. Microwave dish on HIGH 10 mintues. Stir, cover and Microwave on MEDIUM 20 minutes or until rice is tender and mixture is bubbly.
  3. Sprinkle cheese and cilantro over mixture; let stand 5 minuites or until cheese is melted. Serve as is or wrap in tortillas, if desired.
