Fiesta Frijoles

Ingredients
- 1 can (16 oz.) black beans, drained and rinsed
- 1 can (16 oz.) pinto beans, drained and rinsed
- 1 can (16 oz.) dark red kidney beans, drained and rinsed
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (11 oz.) whole kernel corn, drained
- 1-1/4 cups salsa or picante sauce
- 1/2 cup quick cooking brown or white rice
- 1 can (2.25 oz.) sliced ripe olives, drained
- 1-1/2 tsp. ground cumin
- 1-1/2 cups chicken, pork or sausage, cooked and chopped (optional)
- 2 cups (8 oz.) Sargento® Fancy Shredded 4 Cheese Mexican Cheese or Sargento® Bistro® Blends Shredded Taco Cheese
- 1/2 cup cilantro, chopped
- Tortillas (optional)
Directions
- Combine beans, tomatoes, corn, salsa, rice, olives, cumin and chicken, if desired in large bowl; mix well. Transfer to 3-quart round microwave-safe casserole dish and cover.
- Microwave dish on HIGH 10 mintues. Stir, cover and Microwave on MEDIUM 20 minutes or until rice is tender and mixture is bubbly.
- Sprinkle cheese and cilantro over mixture; let stand 5 minuites or until cheese is melted. Serve as is or wrap in tortillas, if desired.
