Cheesy Caramelized Onion Potato Skin Snacks
Ingredients
- 6 medium russet potatoes, scrubbed
- 1 tablespoon olive oil
- 2 onions, 1 red and 1 white, coarsely chopped
- 2 tablespoons butter
- 1 teaspoon brown sugar
- 1 teaspoon white sugar
- 2 teaspoons red wine vinegar
- Salt and pepper to taste
- 1-3/4 cups (7 oz.) Sargento® Bistro® Blends Shredded Sharp Wisconsin & Vermont Cheddar Cheese with Real Bacon
- 1 cup chopped fresh parsley
- Optional garnish: Sour cream
Directions
- Rub potatoes with oil. Bake in 350°F oven approximately 1 hour to 1 hour and 10 minutes until tender. When cool, cut each lengthwise in halves and then quarters. Scoop out potato flesh, leaving 1/2-inch thick layer of potato in each skin.
- In a heavy skillet, sauté onions in butter. Slowly stir in sugars until dissolved. Continue stirring and add vinegar. Let mixture thicken and cool.
- Heat oven to 350°F. Place potatoes, skin-side down on greased baking sheet about 1-inch apart and sprinkle with salt and pepper. Sprinkle each potato skin with approximately 1/2 tablespoon cheese and 1 tablespoon caramelized onions followed by 1/2 tablespoon cheese. Bake until skins are crisp and cheese has melted, approximately 30 minutes. Transfer to platter. Garnish with fresh chopped parsley and serve with sour cream, if desired.

- Do-Ahead Tip: The elements of the potato skins and caramelized onions can be made 2 days ahead and then assembled and baked on game day. Store in an airtight container in the refrigerator.
