Hazelnut Citrus Salad

Ingredients

  • 2 Tbsp. lemon juice
  • 2 tsp. sugar
  • 1/4 cup hazelnut or vegetable oil
  • 3 cups torn salad greens
  • 1-1/4 cups (5 oz.) Sargento® Fancy Shredded Mild Cheddar Cheese
  • 1/2 cup (2 oz.) Sargento® Artisan Blends™ Shredded Parmesan Cheese
  • 1-1/2 cups orange sections
  • 1 cup grapefruit sections
  • 1 cup seedless green grapes
  • 1 can (8 oz.) sliced water chestnuts, well drained
  • 1/3 cup chopped hazelnuts, toasted

Directions

  1. Combine lemon juice and sugar in a small bowl. Slowly add oil, whisking until smooth and thickened; set aside.
  2. Combine salad greens, Cheddar cheese, Parmesan cheese, orange and grapefruit sections, grapes and water chestnuts in large bowl.
  3. Add dressing; toss gently. Sprinkle with hazelnuts; serve.
