Chicken Tostadas

Ingredients

  • 4 (6-inch) corn tortillas
  • 1 can (16 oz.) fat free refried beans
  • 1-3/4 cups (8 oz.) chopped cooked skinless chicken or turkey breast
  • 3/4 cup chunky-style salsa, divided
  • 1 tsp. cumin
  • 2 cups (8 oz.) Sargento® Shredded Reduced Fat 4 Cheese Mexican Cheese, divided
  • 1-1/2 cups sliced romaine lettuce
  • 1 cup chopped fresh tomato

Directions

  1. Spray both sides of tortillas with nonstick cooking spray. Place on baking sheet; bake in preheated 400°F oven 10 minutes or until golden brown and crisp. Transfer to four serving plates.
  2. Meanwhile, combine beans, chicken, 1/2 cup salsa and cumin in medium saucepan. Cook over medium heat 5 minutes or until hot, stirring occasionally.
  3. Spread bean mixture evenly over tortillas; top with 1-1/2 cups cheese. Top with lettuce, tomato and remaining salsa; sprinkle with remaining cheese.
