Mediterranean Salad
Ingredients
- 4 large plum tomatoes, chopped
- 1 large cucumber, peeled and diced
- 1 can (15 oz.) garbanzo beans, rinsed and drained
- 2 cups (8 oz.) Sargento® Shredded Reduced Fat Sharp Cheddar Cheese
- 3/4 cup reduced fat sour cream
- 2 Tbsp. fresh lime juice
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 cups (5 oz.) baby spinach leaves
- 1/4 cup chopped fresh cilantro
Directions
- Combine tomatoes, cucumber, garbanzo beans and cheese in large bowl.
- Combine sour cream, lime juice, salt and pepper in small bowl. Add to cheese mixture; toss well. Spoon over spinach leaves; sprinkle with cilantro.
